A blend of aromas of wild and dry woodland herbs with a subtle mineral note. Balsamic, refreshing and elegant with perfectly-balanced bitter-sweet sensations. Vermouth made from a unique infusion of aromatic herbs and aged in the barrel before bottling at our winery.
The essence of a vermouth, what mainly defines it, is the combination of aromas and flavors contributed by the botanicals with which it was made.
Artemisia is the main herb and the one with which vermouth has its historical origins.
But there is another plant, also very common in vermouth, gentian, which contains what is probably the most bitter substance in the world: amarogentin.
We wanted to experiment with this herb to harness the pleasure of bitterness by creating a bold and seductive vermouth.
VINIFICATION
The base wine produced is a Macabeo with good structure, which allows for ageing and which is also characterized by being organoleptically very neutral, as we do not want to interfere with the action of the exceptionally bitter botanicals that we have chosen.
